To get the best out of St Sever pigeon skewers, here are two very simple tips:

- Add a knob of butter, flavoured with garlic and berbs, during cooking; this will enhance the natural taste of the bird. This butter can be prepared a long time beforehand and kept in the refrigerator or freezer, rolled up in aluminium foil.

- Before cooking, macerate your skewers for around 4 hrs in a marinade of olive oil and herbs (parsley, thyme, sage...) or spices (chopped chili pepper).
During cooking, baste your skewers with the rest of the marinade. This will stop the pigeon from drying out and will preserve all its natural flavour.
